measuring all-purpose flour

This site converts 1 cup of AP flour just at 100g but the AP flour bag states 1 cup = 120g. Just wondering why the difference and is it best to use the 100 g conversion? Thanks.

Hi Holly:

Some flours will weigh more, some less, so use the weight per volume shown on the container of flour. I checked the bag of flour here (Gold Medal AP flour) and it states 1/4 cup = 30 grams, so for that flour, 1 cup = 120 grams also.

Compaction of material is an important aspect for dry ingredients. Freshly sifted flour will weigh less per volume than settled flour, and will weigh a lot less per volume than packed flour. For that reason, most chefs weigh dry ingredients such as flour. It's also the reason for the statement on packages, "sold by weight, not by volume." 120 grams = 1 cup of your flour, whether it actually fills a 1 cup container or not.

Again, use the weight per volume shown on the flour container, not what you may find here or elsewhere.
