I have to pour a sign footing that is 5' diameter (round) and 10' deep. I came up with aprox 7.5 yards.

Running the formula for the volume of a cylinder (using feet): pi * radius^2 * height = 3.1415927 * 2.5^2 *10 = 196.35 ft^3.

196.35 ft^3 / 27 ft^3 = 7.27 yd^3. As you should round up with concrete, your approximation of 7.5 cubic yards is correct.
