Converting based on substance being messured

I cook fresh collard greens by the bunch and use .25 cups of olive oil in the recipe. I have been trying to determine how much cooked collards equals 1 cup in grams. How do I determine the weight of a substance that isn't in your list to choose from? I'm sure collard greens are more dense than say cooked spinach.
